Welcome back to Green Plate Diaries! In this week's blog post, I am excited to share my latest cooking adventure- a delicious quinoa chickpea bowl designed for a balanced, quick, and easy meal! In my exploration of home-cooked meals, I must admit that this dish did lack some flavor. With high expectations, my first bite left me a little disappointed. Reflecting on it, I believe that a scoop of tahini and the addition of avocado would elevate the taste! The avocado is a great addition to healthy fats and adds a new element of texture! Overall, I would recommend giving this recipe a try, you can even feel free to add different vegetables than the ones listed.


Ingredients:

  • Quinoa

  • Carrots

  • Broccoli

  • Sweet Potato

  • Lemon

  • Spices (Salt, Pepper, Everyday Seasoning)

  • Optional- Tahini & Avocado
