Welcome back to Green Plate Diaries! I'm excited to share this week's recipe featuring Black Bean Fajita Tacos, a dish that perfectly balances deliciousness with nutrition. When it comes to taco nights, this recipe takes the crown! To begin, I heated a saucepan and sautéed the colorful mix of bell peppers, onions, and hearty black beans. This step not only infuses the veggies with flavor but also sets the stage for that delightful crispiness we all love. Once cooked to perfection, I transferred this vibrant combination onto a baking tray and popped it into the oven, allowing the edges to become irresistibly crispy. Black beans, packed with fiber, offer a satisfying hearty texture to the tacos, while the bell peppers contribute an excellent source of vitamins A and C. Not only do they add color to our plate, but they also contribute to our overall well-being.
