Hi! Welcome back to Green Plate Diaries- up on the menu this week we are diving into the classic tomato soup and grilled cheese except add a twist. Don't be fooled by the simplicity of this dish, I added a twist to elevate its flavor and nutritional value. Classic comfort food often holds a special place in our hearts, but that does not mean we can't spice things up a bit. This week, instead of sticking to the traditional recipe, I got creative by adding healthy fats and some vegetables. The addition of the onion, tomato, and avocado significantly made this dish better! The spinach is packed with vitamins and minerals such as iron, vitamin C, and folate. In all transparency, I have been feeling a little sick this week and this is all that has sounded good! It is not some extravagant fancy dish but its exactly what I needed this week:)
