Welcome back to another week of Green Plate Diaries! If you are searching for a quick, delicious, and easy dinner option, you're in luck! This week, I am featuring a delightful combo of vegetable fried rice paired with golden, crispy samosas. The main portion of the meal is the vegetable fried rice packed with vibrant colors and a medley of vegetables. What is so incredible about this dish is that it is incredibly customizable, allowing you to use whatever vegetables and ingredients you have on hand. I was able to reuse my carrots, broccoli, and ride that I already had in my pantry! The ingredients used in this dish offer a wide array of benefits from the eggs providing protein, the brown rice packed with nutrients, and the vegetables providing doses of antioxidants/ beta-carotene. Ingredients:

  • Brown Rice

  • Eggs

  • Carrots

  • Broccoli

  • Edamame or Peas

  • Onion

  • Soy Sauce
