Welcome to the first blog post of Green Plate Diaries, where each week is a different canvas of delicious plant-based creations! Up on the menu, this week was soy chorizo tacos paired with a delicious side of broccoli! As a busy college student, I am always on the hunt to find quick and healthy dinner options that fuel my body which is why this dish is perfect! Navigating a vegetarian lifestyle can add an extra layer of consideration, especially when it comes to the inclusion of all seven major food groups. In this particular dish, we are receiving protein from the plant-based meat, the chickpeas, and the black beans- each of which offer different nutritional benefits for the body. The plant-based meat alongside being packed with protein also provides the body with an adequate amount of fiber. Black beans belong to the legumes family which are considered a sub-group of vegetables. We have incorporated our grains via the tortilla and encompassed our vegetables through the super greens and broccoli!
This dish is not just a vegetarian alternative, it's a genuine competitor in the realm of tacos. The vigorous protein profile, combined with the spices and textures carefully curated in each bite ensures a sensory experience that is very comparable with its meat competitors.
