Welcome back to week 2 of Green Plate Diaries! This week on the menu we have a fan-favorite comfort meal: Pasta with Veggies and Bread! For this meal, I thought I would keep it simple and introduce chickpea and lentil noodles. These specific types of noodles offer a wide variety of nutritional benefits from high protein content, and high fiber content, rich in nutrients, to lower glycemic index (comparatively speaking to refined wheat products). The vegetables help add balance to this meal with their high levels of antioxidants and their ability to help balance blood sugar levels! One tip I have when trying to incorporate a more holistic approach to cooking is to consider using metal pots versus non-stick. Non-stick pans get coated in polytetrafluoroethylene commonly known as teflon. Teflon is a synthetic chemical made out of carbon and fluorine. When it comes to the kitchen it is important to recognize that even small changes can have a dramatic impact on our health!
Ingredients:
Chickpea Noodles
Your choice of sauce (Pesto, Marinara, Olive Oil, Butter)
Veggies (Carrots, Broccoli, Sweet Potatoes, Cauliflower, Peas, the choices are endless)
A baguette
